M.'S ORIGINAL OATMEAL COOKIES | |
2 c. white sugar 2 c. brown sugar 3 c. flour 6 c. rolled oats 2 tsp. baking soda 1 1/2 tsp. salt 2 c. lard (no substitutes) 1/2 c. raisins, soaked a few minutes in hot water 3/4 c. pecans 4 whole beaten eggs 1 1/2 tsp. vanilla Combine sugars and lard. Mix until creamy. Sift dry ingredients together. Mix well remaining ingredients. Shape the mixture into rolls 1 1/2 inches in diameter. Store in refrigerator overnight. Cut into 1/4 inch slices and bake at 350 degrees until done. Mixture will keep for a reasonable time in refrigerator. Slice off desired amounts and bake. The thicker the slice, the bigger the cookie and the longer it will take to bake. McKinney's Cafe was a restaurant located in downtown Jefferson City for many years and they served these huge oatmeal cookies, the best in town!! |
