SCALLOPED TOMATOES 
1 (1 lb.) can tomatoes
4 slices toast, cubed or 1 1/2 c. croutons (toast is best)
1 tbsp. minced onion
1/4 c. butter, melted
1 c. cubed Mozzarella cheese
1 c. cubed cheddar cheese
1/2 tsp. salt
1/4 tsp. pepper

Combine tomatoes, toast, onion, butter, cheeses, salt and pepper in a 1 1/2 to 2 quart casserole. Bake, uncovered at 375 degrees for 20 minutes. Serves 4 to 5.
