ARMADILLO EGGS 
1/3 lb. Monterey Jack cheese, shredded
1/2 lb. bulk hot sausage (Jimmy Dean)
1 1/2 c. buttermilk Bisquick Mix
1 pkg. Shake & Bake for pork
1 lb. jalapeno or green chilies
1 egg

Mix sausage and Bisquick. Slit and de-seed jalapenos. Stuff with cheese. Pinch closed. Pinch off sausage. Make a little pancake approximately 1/4 inch thick. Wrap around pepper, roll around until like an egg. Dip "arm" egg in 1 beaten egg. Roll in Shake & Bake mix. Bake at 300 to 325 degrees for 25 to 30 minutes on a greased pan (cookie sheet).
