ARMADILLO EGGS 
2 lbs. Owens pork pan hot sausage
1 qt. pickled jalapeno peppers
1 lb. Cheddar cheese, grated
1 pkg. pork Shake 'n Bake

Set sausage out while getting everything ready, so it can be about room temperature. Cut the stem end off of the peppers and scrap out the seeds. Stuff pepper with cheese. Pat out small, thinly patty of sausage. Wrap sausage around pepper. Coat with Shake 'n Bake. Bake at 350 degrees for 30-45 minutes or until brown.
