KALE SOUP | |
1 ham bone with a good amount of meat on it 2 lb. fresh kale or 3 boxes frozen kale 3 (16 oz.) cans kidney beans 1 pkg. carrots, sliced 5-6 lg. potatoes, diced 1 lg. onion, cut into wedges 1-2 pkg. linguica 1/2 stick butter 1 tbsp. paprika Generous amount of pepper Saute onion in butter. Add pepper and paprika. Stir until onions are clear. Add ham and enough water to fill up to 3/4 of top of pan. Boil for 1/2 hour. Clean off ham bone and discard bone. Add linguica and cook for an additional 1 hour. Add carrots and potatoes for 1/2 hour more. Add kidney beans and kale. Cook for remaining 30-45 minutes and add salt to taste. Serves 6. |
