GRANDMA'S CHRISTMAS CHERRIES 
1/2 c. butter or shortening
1/4 c. sugar
1 egg yolk
1 tbsp. grated orange rind
1 1/2 tsp. grated lemon rind
1 tbsp. lemon juice
1 tsp. vanilla
1 c. sifted cake flour
1 egg white, slightly beaten
1/2 to 3/4 c. chopped walnuts (or pecans)
6 candied cherries, cut in eighths

Cream butter and sugar together until light and fluffy. Add egg yolk, orange and lemon rind, lemon juice and vanilla; mix well. Add flour and mix well. Chill thoroughly. Form into 1/2 inch balls. Roll in egg white, then in nuts. Place on ungreased cookie sheet. Press piece of cherry in center of each. Bake at 350 to 375 degree oven for 15 to 20 minutes. Makes 2 1/2 dozen.
