CAJUN STYLE DRUMSTICKS 
8 drumsticks (or any other pieces)
2 c. buttermilk
1/2 c. butter, melted
1/4 c. flour
1/4 c. cornmeal
1 1/2 tsp. garlic powder
1/2 tsp. white pepper
1/2 tsp. red pepper
1 1/2 tsp. onion salt
1 1/2 tsp. thyme
1 1/2 tsp. oregano
1 1/2 tsp. paprika
1 tsp. chili powder
1 tsp. salt
3/4 tsp. cumin
1/2 tsp. black pepper

Place chicken in shallow pan, cover with buttermilk and soak 4-8 hours. Chill. Combine flour, cornmeal and seasonings in plastic bag. Drain chicken and roll in butter. Place in bag 1-2 pieces at a time and shake until coated. Place on broiler rack and drizzle with remaining butter. Bake at 400 degrees for 15 minutes. Turn chicken, reduce heat to 325 degrees and bake 30 minutes or until done.
