PAELLA 
1 pkg. (12 oz.) frozen shrimp
1 (3 lb.) chicken, cut up
2 onions quartered
2 carrots cut up
2 tsp. salt
1/2 tsp. oregano
1/4 c. diced pimento
Pepper to taste
6 c. water
2 c. long grain rice or minute rice
2 cloves garlic crushed
1/4 c. oil
1 c. frozen peas

In deep fat fryer or electric frying pan, combine chicken, onions, celery, carrots, salt and pepper and water. Cover and simmer 1 hour. Strain and reserve 4 cups of stock. Bone chicken and cut up meat.

In fryer, saute rice and garlic in oil until lightly browned. Add chicken stock, chicken, peas, pimento, oregano, and saffron if desired. Cover and cook 15 minutes. Add shrimp and cook for another 10 minutes. Makes 6 servings.
