BUBBLE AND SQUEAK 
3 tbsp. butter or bacon fat
1 sm. onion, finely chopped
2 c. mashed potatoes
2 c. shredded cabbage, boiled for 15 minutes

Heat butter or fat in large skillet and fry onion until softened. Add cabbage and cook 2 minutes over low heat. Fold in mashed potatoes until well blended with the cabbage. Press mixture lightly onto surface of skillet to form a large pancake. Cook for 5 minutes or until nicely browned, turn and brown other side. 4 servings.
