MUFFIN CUP PECAN PIE 
CRUST:

1 stick butter
1 (3 oz.) cream cheese
1 c. sifted flour
Pinch of salt

Mold into 24 balls about 1 1/2 inch. Drop balls into small muffin pan and spread.

FILLING:

1 egg, slightly beaten
3/4 c. brown sugar (packed)
1/2 tsp. vanilla
1 c. chopped nuts
1 tbsp. melted butter
Dash salt

1 teaspoon mixture into each shell. Bake at 350 degrees for 15 minutes. Then reduce oven to 250 degrees for 10 minutes. Cool slightly in pan. These freeze very well.
