SANDY'S SAUTEED LEMON CHICKEN 
1/4 c. plus 2 tbsp. lemon juice
1 clove garlic, crushed
Fresh pepper to taste
1 lb. very thinly sliced boneless, skinless chicken breasts
1/2 c. Italian bread crumbs
3 tbsp. butter
Lemon wedges for garnish

If needed pound chicken breasts until very thin. Combine 1/4 cup lemon juice, pepper, garlic and marinate at least 1 hour. Coat each piece in bread crumbs. Saute in 2 tablespoons butter, approximately 3 minutes on each side.

Melt remaining butter and combine with remaining lemon juice and pour over chicken just before serving. Garnish with lemon wedges.

Found this recipe in Patriot Ledger's Cooking Contest. It won second prize. It is my families favorite chicken recipe.
