MOCO LOCO 
PER SERVING:

1 cup white rice
1/2 lb. 80% lean ground chuck or sirloin (whatever you prefer)
butter flavored non-stick cooking spray (Pam)
2 tbsp. butter
2 eggs
1 (10 oz.) can beef or onion gravy (Campbell's)
salt and pepper, to taste
4 slices of your favorite cheese (optional)

Prepare the white rice according to the package instructions (using instant rice for this recipe is fine... Just make sure its cooked thoroughly).

Once the rice is almost done, begin cooking the ground beef. Form the ground beef into two hamburger patties, season with salt and pepper and place in a hot skillet, cooking them as you would normally make a hamburger.

Then, in another small skillet, spray the non-stick cooking spray, add 2 tablespoons butter and place pan over medium-high heat. Once pan is hot, place the 2 eggs in this pan as you are making two fried eggs "over easy". Be sure to not overcook them as you want the yolks a little runny.

Now, place the gravy in a microwaveable bowl or in a pot on the stove and heat until hot.

Then, plate the white rice, place the two hamburger patties on top. Top the burgers with cheese, pour a liberal amount of gravy over that. Then, top with the two fried eggs, more cheese and more gravy and... Voila!!!! You have made a MOCO LOCO!!!
