APPLESAUCE BEAN COOKIES 
1/2 c. shortening
1 c. sugar
1 egg
1 c. mashed cooked pinto beans
1/2 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. nutmeg
1/2 tsp. salt
1/2 tsp. baking soda
1/2 c. applesauce
2 1/2 c. unsifted flour
1 c. raisins
1 c. chopped nuts

In a bowl cream shortening and blend in sugar. Beat in egg. Add mashed beans, spices and salt. Mix well. Stir baking soda into applesauce. Add unsifted flour and applesauce to creamed mixture. Mix well. Stir in raisins and nuts.

Drop by round teaspoonfuls onto greased baking sheet. Bake at 375 degrees for 12-15 minutes, or until slightly browned. Remove to racks to cool. If desired drizzle with light glaze of confectioners' sugar and lemon juice. Makes 5 dozen.

This recipe was fantastic! I changed it according to what was in my panty; I substituted coconut oil for shortening, used only brown sugar, used currants, and egg replacer. They are most likely the best vegan cookies I've ever tasted. The only thing is, my cookies were a little on the spongy side, and I assume this is because I didn't use shortening; what can I do to enhance a crispier texture other than use shortening?
