APPLESAUCE DROP COOKIES
2 c. sifted all-purpose flour
1 tsp. baking soda
1/4 tsp. salt
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/2 c. butter
1/2 c. sugar
1/2 c. dark brown sugar
1 egg
1 c. canned applesauce
1 c. rolled oats
1/2 c. seedless raisins
1/2 c. chopped nuts
1/2 c. semi-sweet chocolate chips

Heat oven to 375 degrees. Sift together flour, baking soda, salt, cinnamon, and nutmeg. Set aside.

In large bowl with electric mixer, cream butter and gradually add the sugars. Beat until light and fluffy. Add egg and beat until blended. On low setting, add the applesauce and dry ingredients. Beat until all ingredients are blended together, using a rubber spatula to scrape down sides. Stir in the oats, raisins, nuts and chocolate by hand.

Drop dough by level tablespoons onto ungreased cookie sheets. Bake 8 minutes or until lightly browned. Remove immediately from cookie sheets to cake racks to cool completely. Makes about 5 dozen cookies.

I omit the nuts and raisins because I don't like them. The cookies are still delicious. They are my favorite.
