HOT WATER BREAD
1 c. white corn meal
1 heaping tsp. baking powder
1 egg
1/2 c. flour
1/4 tsp. salt
Boiling water

Mix first four ingredients together. Add just enough boiling water to make ingredients stick together-be careful not to add too much!-stir in egg. Dough should be stiff. Make patties about 4 inches across and about 1 inch thick. Heat shortening in a medium frying pan to very hot (shortening should be about 1/4 inch deep). Place bread pattie in hot shortening and brown one side and then turn over and brown on other side.

Good served with ribs and collard greens or whatever!
