HOT PEPPER JELLY 
6 lg. green sweet peppers
6 red and green hot peppers
7 c. sugar
1 1/2 c. vinegar
1 bottle Certo
Green coloring (optional)

Clean peppers, discarding seeds. Handle red pepper carefully. Grind or process in blender about 1/2 cup of pepper at a time with small amount of vinegar to grind. Combine with sugar and bring pepper, vinegar and sugar to boil for 5 minutes. Add Certo and boil one minute more. Remove from heat to let stand 5 minutes. This allow mixture to begin to jell and prevents peppers from floating to top. Pour into hot jelly jars and seal with lids. Makes 8 half pints.
