LEMON BROILED SWORDFISH 
Swordfish steaks
1 tbsp. butter
1 tbsp. vegetable oil
1 tsp. minced garlic
1 tbsp. lemon juice
2 tsp. grated lemon peel

Place thawed steaks on greased broiler pan. In saucepan, melt butter with oil. Stir in garlic and cook for 1 to 2 minutes. Add lemon juice. Sprinkle steaks with salt and pepper. Baste with lemon mixture. Broil for 3 minutes. Turn, baste and broil for another 3 minutes. Serve on platter and sprinkle with lemon peel.
