MEXICAN BEEF PIES 
2 lbs. lean ground beef
2 pkgs. frozen onions and bell peppers seasoning mix
2 pkgs. taco seasoning mix
1 tsp. salt
1 tsp. cumin powder
1 tsp. garlic powder

Brown beef with frozen vegetables. Drain. Add packages taco seasonings and cook according to directions. Add remaining seasonings. Set aside.

For each pie:

1 (10 inch) flour tortilla
4 eggs, beaten
2 c. grated Cheddar cheese
Jalapeno pepper slices (if desired)
1 lb. meat mixture

Preheat oven to 350 degrees. Grease two 9 inch pie pans and place tortilla in each pan. Sprinkle jalapeno pepper slices to taste, and top with 1 pound meat mixture and grated cheese. Carefully pour eggs evenly over the pie. Bake for 35 minutes or until set. Garnish with parsley or selection of condiments. Serves 8.

Chopped lettuce
Chopped tomatoes
Chopped onions
Chopped black olives
Grated cheese

Sauces:

Sour cream
Picante sauce
Guacamole

2 avocados, mashed; blended with 1/2 teaspoon garlic salt, 1/2 teaspoon garlic powder, 1 tablespoon lemon juice, 2 teaspoons mayonnaise.
