THE BEST RICE PUDDING 
1/2 c. uncooked rice
1 qt. milk
1/2 c. sugar
3 eggs, separated
2 tsp. vanilla

Cook rice in milk for 1 hour; stirring once in awhile. Take off fire. Beat egg yolks; add to rice. Add sugar and vanilla. Put back on fire. Bring back to a boil. Beat egg whites stiff. Fold into rice mixture. Pour into bowl and top with cinnamon.
