SOLE ROLLS | |
2 lbs. fillet of sole (flounder can be substituted) 1 tsp. salt 1/4 tsp. pepper 1/2 lb. sharp cheese, grated 1 med. onion, chopped 1 egg, beaten 2 tbsp. water Bread crumbs, unseasoned 1/2 c. melted butter Fresh parsley, lemon Wipe each filet to dry and season with salt and pepper. Sprinkle some of cheese and onion on each fillet and roll up jelly roll style. Secure the roll with a toothpick. Dip each rolled fillet in egg and water mixture. Then roll in bread crumbs to coat. Place fillet rolls in well buttered baking dish. Pour melted butter over top of fillets and bake at 400 degrees for 25-30 minutes. Then, place dish under broiler just until rolls are attractively browned (only takes 1 or 2 minutes more!). Serve garnished with parsley and lemon wedges. |
