VIDALIA ONION PIE 
2 lb. Vidalias, peeled & thinly sliced
1/2 c. butter
3 eggs, beaten well
1 c. sour cream
1/4 tsp. salt
1/2 tsp. white pepper
Dash Tabasco sauce
1 (9") pastry shell, unbaked
1/4 c. grated Parmesan cheese

In large skillet, saute onions in melted butter. Combine eggs and sour cream; add to onion mixture. Stir in seasonings. Pour into prepared pie shell. Top with cheese. Bake at 450 degrees for 20 minutes, 3425 degrees for 20 minutes or until browned. Total of 40 minutes, insert toothpick slightly off center. Good with steak or roast beef.
