HOLIDAY OYSTER BAKE 
4 c. firm type white bread
1/2 c. butter
Salt & cayenne pepper
1 pt. raw oysters, well drained
1 tbsp. lemon juice
1 sm. onion, grated
1/2 c. whipping cream
Paprika

1. Remove crusts from bread. Cut bread into 1/4 inch cubes. In large skillet melt half of the butter. Add 2 cups bread cubes. Toss over low heat until golden brown. Sprinkle lightly with salt and cayenne, stirring.

2. Brown remaining cubes in remaining butter. Sprinkle with cayenne and salt.

3. Cover bottom of 2 quart baking dish with 1/3 of the bread cubes. Evenly top with half of the oysters. Sprinkle with salt and cayenne, half the lemon juice and half the onion.

4. Cover with 1/3 of the bread cubes and remaining oysters. Sprinkle with salt, cayenne, rest of lemon juice and onion. Pour in the cream. Top with rest of bread cubes. Sprinkle with paprika.

5. Bake at 325 degrees for 25-30 minutes. Serve immediately.

Tips: This dish can be made with oysters of any size. While fresh ones are best, thawed frozen oysters may be used. If desired, prepare dish and refrigerate up to several hours before baking. Or cut and brown bread cubes ahead. The rest can be finished in minutes. Makes 4 servings.

I found this recipe in a huge file given to me full of great tested recipes. This one is one of our favorites and we have it every Christmas Eve with a green or fruit salad. The cooking time and temp don't really work, you'll have half cooked oysters. Raise the temp to 350°F and cook for an hour and ten minutes in a deep casserole and 50 minutes in a shallow casserole.
