MOLASSES SUGAR COOKIES 
9 c. shortening (2 3/4 lbs.)
12 c. sugar (6 c. white, 3 boxes brown)
3 c. molasses
12 eggs
1/2 c. baking soda
2 tbsp. cloves
2 tbsp. ginger
4 tbsp. cinnamon
2 tbsp. salt
24 c. flour (7 lbs.)
4 c. nuts (add before flour)
3 lbs. raisins (add before flour)

Line several baking sheets with parchment paper. Combine all ingredients to make a cookie batter. Drop by teaspoonfuls onto sheets, 1 1/2 inches apart.

Bake cookies in a convection oven at 350°F for 10 minutes. Adapt to the oven being used, adjusting time or temperature to suit.

Makes a very large batch of cookies (hundreds, depending upon size of cookies). Cookies may be tightly wrapped and frozen.
