PECOS RIVER - CHILI 
2 tbsp. butter, lard or bacon drippings
1 lg. onion, chopped
3 lb. lean ground beef
3 med. cloves garlic (optional)
3 c. water
1 1/2 tsp. salt
4 tbsp. mild chili powder
4 tbsp. hot chili powder
2 tsp. cumin

Cook onion in oil until clear, add meat and spices to pot, stir occasionally. Stir in water and salt, bring to a boil. Lower heat and simmer uncovered 2 1/2 hours. Add more water as needed. Makes 6 servings.
