PEANUT BRITTLE | |
2 c. white sugar 1/2 c. water 1 c. white syrup Boil to hard ball, 260 degrees. Add: 4 c. raw peanuts Continue cooking and stirring until peanuts are done (about 13 minutes), or until you reach 290 degrees. Take off fire and add: 2 tsp. baking soda Spread IMMEDIATELY very thin on well greased cookie sheets. NOTE: If you have your cookie sheets warmed in the oven just before spreading, your spreading will be easier and your brittle will be thinner. Enjoy. |
