REUBEN DIP 
10 oz. deli corned beef
1 (16 oz.) can sauerkraut
1 c. Thousand Island dressing
10 oz. shredded Swiss cheese

Chop corned beef into small pieces. Drain and chop sauerkraut. Mix all ingredients together in heavy saucepan over medium heat until hot and cheese is melted. Serve on cocktail bread or crackers.

I CRAVE this dip; it is FABULOUS!! Very appropriate for that St. Patrick's crowd that is also having a brew! I serve it with pumpernickel, and it pairs nice with other lighter appetizers such as veggies!
