MARVELOUS MUSHROOM SOUP 
4 tbsp. butter
1/2 onion, chopped
1/2 tsp. minced garlic
3/4 lb. fresh mushrooms, sliced
2 tbsp. flour
1/2 c. chicken broth
2 c. half and half
3 tbsp. sherry
1 tsp. salt
1/8 tsp. nutmeg
1/8 tsp. pepper
Chopped parsley

Melt butter in a medium saucepan. Add onion and garlic and saute until tender, about 3 minutes. Add mushrooms and saute 5 minutes, stirring occasionally. Add flour. Cook and stir until a smooth paste is formed. Add chicken broth and half and half gradually, stirring. Add sherry, salt, nutmeg and pepper. Cook on low, stirring occasionally, for 5 minutes. Garnish with parsley and serve. Serves 4.
