BROCCOLI - CHEESE CASSEROLE 
1 can cream of mushroom soup (or chicken or mushroom soup)
2 lbs. fresh broccoli, chopped (or 3 boxes frozen chopped broccoli)
2 eggs
3/4 c. mayonnaise
8 to 12 oz. shredded Cheddar cheese, depending on how much you like)
1 med. onion, chopped
Pam spray
Croutons

Mix can of soup, 2 eggs, mayonnaise, cheese and onion in a bowl, add broccoli. Pour mixture into 9 x 9 inch dish or 9 x 13 inch dish, sprayed with Pam. Pour croutons on top of the dish. Bake in 350 degree oven for about 30 to 35 minutes until croutons are browned. Let sit for about 5 minutes before cutting.
