MAMA'S LITTLE ITALY DISKS | |
These taste best dipped in your favorite Ranch Dressing! =) 4 large potatoes (any kind you like) 3 tsp. olive oil 4 tbsp. Italian seasoning (McCormick or Tones) 3 tsp. garlic powder 2 tsp. garlic salt 2 cups shredded Pepper Jack cheese, for sprinkling Preheat oven to 375°F. Rinse potatoes and cut each potato in 1/2-inch disks. Place disks in a bowl and add olive oil, Italian seasoning, garlic powder and garlic salt. Mix with hands and make one layer on a baking sheet. Bake at 375°F until crispy on the outside and tender in the middle (which in my oven is usually about 25 minutes). Remove and immediately sprinkle Pepper Jack cheese on the tops.
