FETTUCCINE WITH ZUCCHINI AND
SALAMI
 
2 tbsp. olive oil
2 garlic cloves, thinly sliced
1/2 lb. fettuccine, cooked according to pkg. directions
2 sm. zucchini, cut in matchsticks (julienne)
1/4 lb. geneo salami, cut in matchsticks (julienne)
1/4 c. whipping cream
Black pepper, fresh cracked
2 tsp. sm. Italian capers (optional)
Freshly grated Parmesan cheese

Heat up large frying pan. Put in olive oil and sliced garlic. Saute garlic until not quite browned. Add zucchini sticks and saute over medium high heat for 3 minutes. Add salami sticks, whipping cream, black pepper and caper, if desired. Heat thoroughly. Pour zucchini-salami mixture over freshly cooked fettuccine. Garnish with plenty of freshly grated Parmesan cheese.
