HAWAIIAN SWEET POTATO CASSEROLE 
2 c. mashed sweet potatoes
1 c. sugar
1 c. milk
1 egg
1 tsp. salt
1 c. coconut
1 tsp. vanilla

Blend first 5 ingredients until smooth. Add coconut and vanilla. Pour in baking dish and bake 350 degrees for 25 minutes. Remove from oven and add topping. 1 (10 oz.) jar maraschino cherries with juice 1 c. sugar 3 tbsp. flour Dash of salt

Mix in saucepan. Cook until thick, stirring constantly. Spread on top of casserole and serve.
