1/2 c. shortening 2 c. sifted flour 1 c. sugar 2 1/2 tsp. baking powder 1/2 tsp. salt 2 to 3 bananas with brown-flecked peel (about 1 c., sieved) 2 eggs 1/4 c. chopped nuts 1/4 c. chopped maraschino cherries, drained 1/4 c. chocolate chips Prepare a 9 1/2 x 5 1/4 x 2 3/4 inch loaf pan. Melt shortening and set aside. Sift together flour, sugar, baking powder and salt in a large bowl and set aside. Peel bananas and force through a sieve. Set sieved bananas aside. Beat eggs until thick and piled softly. Blend in the bananas, melted shortening, chopped nuts, maraschino cherries, and chocolate chips. Make a well in center of dry ingredients and add liquid ingredients all at one time. Stir only to moisten dry ingredients. Turn batter into pan and spread to corners. Bake at 350 degrees about 45 minutes or until bread tests done. Cool and store. Yield: 1 loaf. |
