HOT MILK SPONGE CAKE | |
2 eggs 1 c. sugar 1/2 c. milk 2 tbsp. butter 1 1/4 c. flour (scant) 1 tsp. baking powder 1/4 tsp. salt 1/2 tsp. vanilla or lemon Heat the milk and butter together in a saucepan. Beat eggs thoroughly. Add sugar gradually to the beaten egg and beat thoroughly. Sift in the dry ingredients and fold into the egg mixture. Add the hot milk and butter. Beat just long enough to mix the ingredients together. Add vanilla. Pour into a greased pan and bake in a moderately hot oven (375 degrees) for the first 10 minutes. Reduce the heat to 350 degrees and bake 20 minutes longer. NOTE: This mixture makes a rather thin batter. This is an excellent cake to use when butter is expensive. |
