APPLE CAKE 
3 lg. apples (Rome, Granny Smith or Winesap), sliced
3 c. flour
3 tsp. baking powder
2 c. sugar
1/2 tsp. salt
1 c. oil
4 eggs
1/2 c. orange juice
2 1/2 tsp. vanilla
1/2 c. sugar and cinnamon

Preheat oven to 350 degrees. Combine flour, baking powder, sugar, salt, oil, eggs, orange juice and vanilla in mixing bowl and mix with mixer for 5 minutes. Batter gets thick!

In separate bowl mix sliced apples with sugar and cinnamon. Grease tube or Bundt pan. Pour 1/2 batter into pan, then 1/2 apples, the rest of batter; top with apples. Bake 1 hour 5 minutes. Test with toothpick.
