CANNED GREEN TOMATOES 
Green tomatoes
Water
Salt

Wash and slice green tomatoes. Pack in sterilized jars, quart size. Add 1 teaspoon salt to each jar, fill with boiling water; seal. Process 5 minutes with 5 pound pressure or cook in hot water bath for 8 minutes.

NOTE: If you like fried green tomatoes, these are better than fresh green tomatoes because the salt has penetrated the tomatoes.
