4 to 6 cloves garlic, chopped 2 pkgs. ground chuck or hamburger (approx. 4 lbs.) 6 to 8 stalks celery, chopped 6 to 8 carrots, chopped 2 cans water chestnuts, chopped 1/2 head cabbage, shredded 2 to 3 onions, chopped 2 bunches green onions, chopped 2 pkgs. frozen French cut green beans, chopped 2 tbsp. sesame oil 1/2 c. Kikkoman soy sauce 1 tbsp. salt (opt.) 3 to 4 pkgs. lumpia wrappers Place hamburger in Dutch oven with garlic. Cook until hamburger loses its red color. Drain. Return hamburger to Dutch oven and add the chopped vegetables. Add soy sauce, sesame oil and salt. Simmer until heated through. Drain, keep wrappers covered in a damp cloth after opening so they will not dry out. Place about 2 tablespoons of the mixture on each wrapper. Fold the wrapper from bottom over mixture. Fold from left to right and from right to left. Then roll from bottom to top of wrapper. Moisten with water or egg white to seal. Arrange on a large jelly roll pan separating each layer with waxed paper to keep wrappers from sticking together. Cover with foil if freezing before cooking. To cook, put oil in wok or deep fryer and fry until golden brown. Drain on paper towels. Makes about 200 lumpia. Happy eating!! |
