MOM'S RICE PUDDING | |
3 c. milk 1/4 c. sugar 1/4 tsp. salt 1/2 c. rice 2 eggs 1 c. milk 2 tbsp. butter 1/8 tsp. nutmeg 1/2 c. raisins (optional) Place 3 cups milk, sugar and salt in top of double boiler. Stir in rice; cook over double boiler with water, boiling until tender 1 1/2 hours. Beat eggs; beat in remaining 1 cup milk. Mix into rice. Pour into greased baking dish. Dot top with butter. Sprinkle with nutmeg. Place in a baking dish in a pan of hot water and bake at 350 degrees for 1 hour or until a knife comes out clean. Makes 4 servings. Can be doubled, use 2-quart bowl. NOTE: If raisins are used, soak for a few minutes in boiling water. |
