PICKLED EGGS 
1 c. sugar
1 c. vinegar
Juice from beets (2 pt.)
Salt & pepper to taste
1 onion
3 cinnamon sticks
2 doz. eggs

Boil sugar, beet juice, vinegar, salt and pepper. Slice onions and make rings drop in juice mixture then add cinnamon sticks. Cook and peel eggs. Layer beets and eggs in 1 gallon jar then pour beet juice mixture over. Let cool then refrigerate.
