NO-PEEK BEEF STEW 
2 lbs. stew meat (can use more)
6-8 potatoes, cleaned and cubed
3-4 carrots, sliced and diced
2-3 onions
3-4 stalks celery
1 lg. can stewed tomatoes
1 (8 oz.) can beef broth
5 tbsp. tapioca (beads)

Mix all together into a Dutch oven. Heat oven to 375 degrees and bake for 6 to 8 hours. Oven temperature may vary - so you might not cook as long. If you like more of a broth or gravy, add more liquids.
