ZUCCHINI SQUASH BREAD 
3 c. self-rising flour
2 c. sugar
1 c. oil
2 c. grated zucchini
3 eggs
3 tsp. vanilla
3 tsp. cinnamon
1 c. chopped pecans

Beat eggs, add oil, sugar, vanilla, cinnamon and stir until well blended. Add flour and zucchini. Alternately add nuts. Mix and bake at 350 degrees for 40 to 60 minutes. Test with toothpick. Makes 2 loaves.
