ZUCCHINI SQUASH BREAD 
2 c. white sugar
1 c. cooking oil
3 eggs
2 c. peeled and chopped zucchini
3 c. flour
1/2 c. chopped nuts
3 tsp. vanilla
1 tsp. salt
2 tsp. cinnamon
1 tsp. baking soda
1/4 tsp. baking powder

Beat egg until foamy. Add oil, sugar, vanilla, zucchini and nuts. Sift dry ingredients. Add to the mixture and mix well. Also use a spoon. Put in two bread pans that are well greased and floured. Bake 1 hour at 350 degrees. Freezes very well.
