ZUCCHINI SQUASH BREAD 
3 c. thinly sliced zucchini
1 c. Biscuit mix
1 sm. onion, diced
1 c. grated parmesan cheese
2 tbsp. parsley
1/2 tsp. salt (or seasoned salt)
1 tsp. oregano
1 clove garlic, finely chopped
1/2 c. oil
4 eggs, slightly beaten

Preheat oven to 350 degrees. Grease 13 x 9 pan. Mix all ingredients and spread in pan. Bake until golden brown, about 30 to 45 minutes. Cool and cut into squares.
