LOW-SALT AND LOW-FAT CHICKEN

This dish will give you all the flavor of a good chicken dish without the salt and very little fat. Remove the skin of the chicken, that is where most of the fat in the bird resides. I know, you like the skin. Please cut down on the skin in any case.

1 (3 to 3 1/2 lb.) whole frying chicken, skinned
2 tbsp. olive oil
2 tbsp. lemon juice
2 cloves garlic, crushed
1/4 tbsp. oregano
2 tbsp. dry white wine
Pepper to taste

Cut the chicken in half. Blend marinade of all the remaining ingredients. Soak chicken for 10 minutes. Bake in greased pan at 375 degrees for 45 minutes to 1 hour, or until browned and tender. Serves 4.
