BEANS AND PEPPER SALAD 
15 oz. jar great northern beans, drained, rinsed
1 c. red bell pepper, chopped
1 c. yellow bell pepper, chopped
1/2 c. sliced green onion
1/4 c. crumbled blue cheese

DRESSING:

2-4 tbsp. olive oil
2 tbsp. orange juice
1 tbsp. red wine vinegar
1 tbsp. fresh or 1 tsp. dried basil
1 tsp. grated orange peel
1/4 tsp. salt

Combine all salad ingredients. In small jar combine all dressing ingredients and shake well. Pour over salad and toss. Refrigerate an hour to blend flavors. Serves 6.
