CRUNCHY TUNA SALAD IN PEPPER
BOATS
 
2 lg. peppers, halved lengthwise
2 (6 1/2 oz.) cans tuna, drained & flaked
1/2 c. salad dressing or mayonnaise
1 carrot, chopped
1 celery stalk, chopped
1/2 med. red onion, chopped
1/4 c. chopped pecans (opt.)

Place pepper halves on plate. Microwave on high for 60 seconds. Chill. Combine remaining ingredients; chill. Spoon tuna mixture into pepper halves to serve. 4 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
