HUNGARIAN GULYAS WITH DUMPLINGS 
1 lb. beef stew, in small pieces
1 tbsp. salt
1 med. onion, chopped fine
2 tbsp. oil
1 tsp. paprika
1/4 tsp. black pepper
3 med. carrots
2 parsley roots
1 qt. plus 3 c. water
2 tsp. beef bouillon
4 med. potatoes

Brown onions in oil; add paprika and meat. Let beef simmer in its own juice for one hour. Add sliced carrots and chopped parsley roots. Simmer for 1/2 hour. Add water, diced potatoes and salt. Simmer until potatoes are done. Prepare egg dumpling batter. Drop by teaspoonful into gulyas soup. Simmer for 5 minutes after dumplings rise to surface.

EGG DUMPLING BATTER:

18 tbsp. flour
3 eggs, unbeaten
1/4 tsp. salt

Mix and let stand 1/2 hour.
