3 lg. cloves garlic, crushed 2 tsp. salt (optional) 1 tsp. dry mustard 1/4 tsp. pepper 3 tbsp. fine chopped parsley 6 tbsp. lemon juice 1/2 c. olive oil 1/4 c. white wine (optional), is also excellent Soy sauce can be used if in the Chinese mood - add to taste or smell. This can be used for chicken, ribs, shrimp and beef. Let sit at least 2 hours. Turn often, the longer the better - up to 5 days meats still good uncooked. You may want to add more lemon juice and garlic to taste. About 7 pieces of chicken or you can double in a tupperware marinating dish!!! Always use a covered marinating dish. |
