BISQUE 
1 lb. butter
1 tsp. nutmeg
4 tbsp. garlic powder
1/2 gal. milk
2 c. sherry (not dry)
Shrimp, lobster, or crabmeat (one or all three)
1 1/2 c. flour
1 tbsp. white pepper
1 tsp. celery salt
2 pts. half & half
15 slices Swiss cheese

In a heavy pot, melt butter. Stir in flour. Whisk for about 3 minutes. Add seasonings, milk, and half & half. Stir with a whisk until well blended. Add Swiss cheese and sherry. Whisk, whisk, whisk, over medium to low heat until thickened and cheese has melted. Add seafood shortly before serving. (Add more milk to thin if necessary.) Sprinkle nutmeg over to serve.

This recipe melts in your mouth. It is perfect for any season and it freezes well.
