6 med. potatoes
Water
1 1/4 tsp. salt
1/2 c. milk
4 tbsp. butter

EQUIPMENT:

Vegetable peeler
Knife and cutting board
2 qt. saucepan with cover
Measuring c. and spoons
Potato masher

Peel the potatoes and cut them into quarters. TIP: Move the vegetables peeler away from yourself. Use a cutting board.

Put the potatoes in the pan and cover them with water. Add 1 teaspoon salt. Cover the pan and place it over medium-high heat. When the water begins to boil, turn the heat down to medium. Let the potatoes boil for 20 minutes or until they are soft when pricked with a fork. Pour the water from the potatoes. Return the potatoes to the pan.

Mash the potatoes slightly. Add milk, butter, and 1/4 teaspoon salt. Then use the potato masher to whip the potatoes until they are light and fluffy. TIP: You can also use an electric mixer to whip the potatoes.
