ZUCCHINI BREAD 
3 eggs
1 c. oil
2 c. sugar
2 c. grated zucchini
2 tsp. vanilla
1 tsp. salt
1 tsp. baking soda
3 1/2 c. flour
1/4 tsp. baking powder
2 tsp. cinnamon
1/2 c. nuts (optional)

Beat eggs until light and foamy. Add oil, sugar, zucchini, and vanilla. Mix lightly but well. Mix dry ingredients and nuts, then blend into first mixture. Bake in 2 greased 9 x 5 inch pans at 325 degrees for 1 hour. Remove from pans immediately and cool on racks.
